The Production Process

From the olive groves of the Akrotiri Peninsula in Chania, we collect exclusively the fruit of the Koroneiki variety, which is recognised by the International Olive Council as a world heritage variety.

The fruit is transported on the same day from the field to the mill using only plastic boxes and jute sacks, which are carefully placed so as to avoid stacking and ensure adequate ventilation.

The fruit is cold-pressed immediately after harvesting, following specifications that ensure an excellent product.

The result is extra virgin olive oil of superior quality, with high nutritional value, unaltered beneficial ingredients, rich aroma, slightly spicy and fruity flavour.
